The remarkable adaptation of bill structures in shorebirds is incredible. For me the epitome is the Godwit. It's bill is flexible and capable of amazing dexterity. It pushes its bill deep down into the mud and can detect prey via its very sensitive tip. It can then flex the bill like a pair of tweezers to pluck the prey from the mud.
